There are two popular ways to make a plum cake – one with rum and without rum.

This recipe is made without rum.

This also does not use an oven to bake the cake, we have used a pressure cooker to bake the cake!

INGREDIENTS

The Plum Cake’s main ingredients are its soaked nuts and grapes! And they are to be used generously, the more nuts, the better the taste is!

Dry Fruits & Nuts

  • Tutti Frutti – 1 cup
  • Chopped Dates – 1/2 cup
  • Chopped Cherries – 1/4 cup
  • Dried Cranberries – 1/4 cup
  • Golden Raisins – 1/2 cup
  • Black Raisins – 1/2 cup (optional – because this does not get soaked completely and at times can give a crunchy feel)
  • Chopped Almonds – 1/2 cup
  • Chopped Cashewnuts – 1/2 cup

Caramel Syrup

  • Sugar – 1/2 cup
  • Water – 2 tbsp (just enough for the sugar to dissolve)
  • Hot Water – 1/2 cup

Other Ingredients

  • Butter – 130g
  • Brown Sugar – 1.5 cup
  • Eggs – 2
  • Maida / All Purpose Flour – 2 cup
  • Salt – 1 teaspoon
  • Baking Soda – 1 teaspoon
  • Baking Powder – 1 tbsp
  • Cinnamon Powder – 1 teaspoon
  • Cardamom Powder – 1 teaspoon
  • Vanilla Essence / Extract – 1 tbsp
  • Grape Juice – 3 cup

INSTRUCTIONS

STEP 1 –ย SOAK DRY FRUITS

Take all the Dry Fruits and Nuts listed in the ingredients in a soaking bowl, pour the juice of the grapes, mix the nuts well and soak them for a minimum ofย 48 hours.

STEP 2

After 48 hours, drain the soaked dry fruits completely using a filter and store the juice separately.

This juice is required to create the cake batter.

STEP 3 – MAKING THE CARAMEL SYRUP

Add the 1/2 cup sugar to a vessel, add 2 to 3 tbsp of water and dissolve the sugar, heat in low flame.

Heat until the sugar caramelizes and the color turns brown.

STEP 4

Switch off the heat and add hot water to this very slowly and carefully. Else water might splash because of the heat!

Mix this thoroughly and keep this Caramel Syrup separately.

STEP 5 – PREPARING THE PLUM CAKE BATTER

In a mixing bowl, add 130g butter and beat well using a hand mixer.

Then add brown sugar to this bowl and beat well again.

STEP 6

Add the eggs (one by one) and beat thoroughly again so that everything is mixed well.

Now add the caramel syrup that we prepared above and mix well again.

Through a filter, add maida / all purpose flour, salt, baking soda, and baking powder. Sieve this through the filter into the mixing bowl, and beat again.

Make sure to beat well so that there are no lumps.

Now add cinnamon powder, cardamom powder, and vanilla essence/extract and beat well again.

STEP 9

The final step in making the batter – add the soaked nuts, and the filtered grape juice and mix thoroughly using a spatula (not hand mixer).

STEP 10 – GETTING OUR HOMEMADE OVEN READY ๐Ÿ™‚

Before moving to the next step, let’s get our homemade oven ready ๐Ÿ™‚

Our standard way โ€“ Spread some rock salt at the bottom of a pressure cooker, place a wired steel rack to mount the cake pan and close the cooker. You do not need to place the regulator weight. Heat the cooker in medium flame for about 10 mins and leave it on!

Your pre-heated homemade oven is ready ๐Ÿ™‚

If you do have an oven, preheat to 350F/180C.

STEP 11

Grease the cake pan using butter and place a parchment paper at the bottom of the pan. Pour the cake batter into this pan, tab it twice so that the batter settles in the pan well. Make sure you do not fill up to the rim of the pan because the cake is going to need that extra space when it gets baked.

STEP 12

Place the cake pan inside the pressure cooker, close the cooker (do not use the regulator) and heat for 45 minutes in low flame.

How do you know the cake is done?

Prick the cake using a toothpick and see if any cake batter sticks to it (check in intervals). Usually, after 40 minutes, you will see no batter sticks to the toothpick!
