It is not just because this is a very rare and different Star Gooseberry recipe. I mean there are recipes on this star gooseberry, but if you notice, it is either a jam, pickle or a soup.
But what we have here is a Star Gooseberry soaked in Sugar Syrup – like a Jamun!

The regular recipe options with a Star Gooseberry

But they are tried and tested recipes.
Gooseberry jams are made as a regular jam – grind them to a paste along with other additives and making the spread.
Pickles are again, a regular way of doing, especially considering that the gooseberry pickle is very famous!

We took the star gooseberries and wanted to try something different. We wanted to retain the natural sourness of the gooseberry and retain its health benefits, but we also wanted to make something very very tasty.Thus, was born this recipe. There are very few versions of this recipe across the web, but this has its own variation and own style. We love jamuns, we love anything in sugar syrup. And that is when we thought why not make this like we make jamuns. Dip the star gooseberries in sugar syrup and let’s see, we thought.
Not a bad decision at all. What came out was an awesome tasting recipe, the star gooseberry jamuns in sugar syrup was extremely tasty, had its natural sour/sweet taste as well.
And the best thing was, the sugar syrup into which the gooseberry was soaked, became awesome tasting by itself over a period of time.
The sourness of the gooseberry mixed with the sweetness of the sugar syrup combined to form a wonderful taste, that it is hard to describe in words. It has to be tasted to feel!
STEP BY STEP INSTRUCTIONS ON HOW TO MAKE STAR GOOSEBERRY In SUGAR SYRUP
- Star Gooseberry – 1 cup
- Sugar – 1 cup
- Cardamom Powder – 2 pinch
- Edible Camphor – 1 pinch
Edible camphor is used to enhance the taste and flavor of various sweets and desserts. It is safe to consume, no need to worry there!
STEP 1 – Boil Star Gooseberry
Wash the star gooseberry thoroughly in water to remove any dirt. Pressure cook the berries allowing it to cook completely (let 4 to 5 whistles).
STEP 2 – Prepare Sugar Syrup
Start preparing the sugar syrup while the gooseberries are pressure cooked. Boil one cup of sugar in one cup of water until you achieve “one string consistency”.

STEP 3 – Add the berries into Sugar Syrup
Move the cooked star gooseberries into the sugar syrup and boil for further 5 minutes.
STEP 4 – Add cardamom and edible camphor
One the berries are boiled in sugar syrup for 5 minutes, add the cardamom powder and edible camphor and switch off the stove.
That’s it! Allow it to cool, store in a clean container and relish as and when required!
