Summer is the season for mangoes, and the Mango Cheesecake Recipe with mango pulp from Homemade Cuisines is a tribute of sorts to the phenomenal fruit. Points to note

  • Use fresh and ripe mangoes only. This is very important.
  • Use fresh cream cheese and fresh butter.
  • Buy good quality fresh cream.
  • If you are doing this the first time, feel free to use the glass containers or bowls like how we have used here. You can use a cake pan, but make sure to use a detachable pan so that it is easy to separate the cheese cake.
  • Gelatin is used to provide stability to the cake since this is a no-bake recipe.

  • 250 ml Fresh Cream Make your own Whipped Cream
  • 1/2 cup Cream Cheese
  • 1/2 cup Butter (melted quantity minimum required 120 ml)
  • 11/2 cup Mango Puree (remove the skin from mango , cut in to small pieces and blend in mixer without adding water)
  • 1 cup Condensed Milk Sweetened Condensed Milk Recipe
  • 4 tbsp Gelatin Powder
  • 3 tbsp sugar

Making Cheese Cake Base
  1. Melt the fresh butter in a hot pan. Take the and add it to the crushed digestive biscuits and mix well.

  2. Move the mixture into a cake mold. You can also use a glass bowl as used here and shown. Press the contents evenly, this forms the bottom crunchy layer of the cake. Refrigerate for 30 minutes so that the bottom layer gets set.

  1. Make Whipped Cream from Fresh Cream. Click here for the recipe.

  2. Beat the Cream Cheese using a beater (can be done using a manual beater as well) and add to Whipping cream and mix thoroughly.

  3. Now add Condensed milk to the Cream and mix well. Do your own Sweetened Condensed Milk recipe.

  4. Add Mango Puree to the Cream and mix well again using a beater.

  5. Add hot water to the 2 tbsp of Gelatin powder and mix well. Add this Gelatin mix to the Cream and mix well. This forms a great paste as shown. This forms the second layer of the cake. Now the question - Why use Gelatin? Since this is a no bake cake, we need an agent to stabilize the cake by thickening a bit and adding that solid feel. Else the cake will crumble.

  6. Take the Cake bowl and add the cream to the cake and spread evenly to form the second layer of the cake. This is a very important layer since this gives the cheesy flavor and taste to the cake. Refrigerate this for 30 minutes.

  1. Mango Top Layer Ingredients - Mango Puree, Sugar, Gelatin Powder and water.

  2. Mix the water and gelatin powder. Again we know why we use gelatin powder here. To stabilize the cake since this is a no-bake cake.

  3. Add Sugar, Gelatin mix to the mango puree and mix well.

  4. Now, add this to the Cake Bowl and spread evenly. This forms the super mango tasty third layer. Refrigerate the whole cake for minimum 8 hours to set completely. Once done, take and server!
