  • 2 tbsp Red Chilli Powder
  • 1 tbsp Coriander Powder
  • 1/2 piece lemon
  • 1/2 tbsp Turmeric Powder
  • 1 tbsp Salt (as needed)

  • 8 tbsp Oil

  1. Ingredients for your reference. Very simple and your regular set of masala powders. Nothing extravagant is required here.

The Making of the Masala
  1. Add Red Chilly powder, Coriander powder, salt, turmeric powder together in a bowl.

  2. Squeeze half lemon to this mix and mix well. Note: The lemon can be added as a first item as well to the mixer bowl. Add very little water to this bowl and mix thoroughly.

  3. This is a very important step. The water should be added very little and the paste should be thick. If the paste is a bit dilute and not thick, then the masala taste wont get into the fish and the taste might be not pungent enough. Remember, fish fry is 50% fish, but the rest 50% is the masala and how well it has been absorbed by the fish during frying.

Preparing the Fish
  1. Take the fish in hand and start applying the masala paste slowly and steadily over the fish, covering all places of the fish. Do it slowly and make sure the paste is applied thoroughly. Note: Use hand preferable so that you know the masala is applied properly. And the taste will feel better for sure 🙂

  2. Once the masala is fully applied, the fish should look like this. Then marinate the fish for 20 minutes. The fish starts absorbing the masala during this time and is ready for the fry.

Frying the Fish
  1. Take a frying pan and place it on the stove with medium flame. Add 4 to 5 tbsp of oil. Do not add more oil, else the masala from the fish will easily get into the oil and will never get into the fish.

  2. Once the pan is hot, add all the fish one by one slowly (else oil is going to splash on your hands!). Keep the stove in medium flame and allow the fish to fry at this rate. If the pan is too hot, then the fish could get burnt. The oil, masala and the fish should get fried slowly so that the taste is not lost.

  3. Keep frying for 4 to 5 minutes, then turn the fish over the other side. Keep doing this until the color turns to golden brown. Note: If the oil reduces during frying, then its fine to add more oil to maintain the consistency.

  4. One the fish is fully fried, then take them out, move to a plate garnish with squeezing very little lemon and also some coriander leaves and serve. This should be a super hit recipe during a weekend!
