Summer Special Falooda Recipe – How to make Homemade Falooda

Falooda Recipe is a summer blockbuster from Homemade Cuisines. This has been an all time favorite for all and has been done so many times at home with great reception that it was a matter of time before this came up here.

It is laden with loads of ingredients with such color, flavor and variety that it is very difficult to find a similar dessert. It is one of its own kind and does not fall under any category such as an ice-cream or sweet.

The layers, the color, the royalness, the richness and the variety is so captivating that it forms a sight by itself. And then when you eat this, well the feeling is beyond expression.

The step by step recipe gives you complete details on how to make this excellent. Most of the ingredients for Falooda is a recipe by itself like the Vermicelli/Sev or the Falooda Milk. We did not make the ice-cream ourselves this time, but will update this recipe when we have our own ice-cream recipe ready here 🙂

  • 3 tbsp Falooda Sev/Vermicelli
  • 3 tbsp Basil Seeds (sabja seeds - soaked and refrigerated for 45 minutes)
  • 3 tbsp Jelly (refrigerated for 45 minutes)
  • 8 tbsp Falooda Milk
  • 4 tbsp Pomogranate
  • 4 tbsp Apple pieces
  • 2 scoops Vanilla Icecream
Falooda Sev/Vermicelli
  • 1 cup corn flour
  • 3 cups water
  • 6 tbsp sugar
  • 1/2 tbsp Food Color Powder
  • 1/2 tbsp Oil
  • 1 Noodle/Vermicelli Press
  • 10 cups Ice Cold Water
Falooda Milk
  • 1/2 litre Fat Milk
  • 15 tbsp sugar
  • 3 drops Rose Milk Essence
  • 4 tbsp Strawberry Essence

Instructions
  1. The Falooda has two main components to be prepared first which are detailed in the further instructions.

    • The Falooda Milk
    • The Falooda Vermicelli


    It would be great if you can make your own Jelly as well, but you still can buy your typical jelly from a store.
  2. Take 3tbsp of Basil Seeds (also called as Sabja Seeds) and soak in a bowl of 200ml water.

  3. This needs to be soaked for 30 minutes until the seeds swell as shown and then refrigerate for 30 to 45 minutes. The Basil Seeds act as a body coolant by nature and adds to the royal feel and gives great texture and look to the Falooda.
  4. Refrigerate the Jelly also for 30 to 45 minutes.
Making the Falooda Milk
  1. Ingredients to make Falooda Milk - High Fat Milk, 15 tbsp Sugar, Rose Milk Essence.

  2. Take the half liter high fat milk in a container. We use high fat milk so that we get a rich and creamy dish that truly gives a royal taste and feeling.
  3. Boil the milk in a container, and slowly add the sugar while stirring.

  4. Keep stirring the boiling milk in intervals. The milk quantity should reduce to 40% of the original amount. This is important for us to get that rich and thick flavor.

  5. Now add 3 drops of rose milk essence to this milk, mix well and keep it in low flame for 3 minutes until the color completely turns. Then switch off the stove.

  6. Move the milk to another container and allow it to cool to room temperature. Once done, refrigerate the milk for 30 to 45 minutes until its cold. The Falooda Milk is ready!

Making the Falooda Sev / Vermicelli
  1. This part explains the process to make the Falooda Sev / Vermicelli. This is the most important ingredient in Falooda and provides all the great look, color and taste.

  2. Ingredients for your reference again 1 cup corn flour, 3 cups water, 6 tbsp sugar, 1/2 tbsp Food Color Powder, 1/2 tbsp Oil, 1 Noodle/Vermicelli Press

  3. Take corn flour, add water and mix well thoroughly by stirring so that no lumps are formed.

  4. Add sugar and green color powder (food color) to this and keep stirring so that it forms a complete mixture.

  5. Now add this mixture to a pan (non stick preferably) and place it on a stove with full flame. Keep stirring and mixing so that the water starts to turn thick. This will take max 5minutes. The texture should become semi-solid.

  6. See below image for reference. This is where you should stop and switch off the stove to have the base ready. This should form a paste so that it is possible for us to squeeze the noodles through the press. If it is liquid, then we wont get the noodles.

  7. Apply little oil to the sides of the Noodles / Vermicelli Press and move the Vermicelli Base into this press while hot. This is important, move the base while its still warm. We need to do this because only then the sev willl not stick and come out as noodles.

  8. Now take the ice cold water (10 cups), and add 20 ice cubes to the water as shown and press the vermicelli base into this water. We need cold water to maintain the Vermicelli's noodleness if one may call 🙂 . Basically it holds the noodles/sev together as needed.

  11. Once its complete, refrigerate the vermicelli for 45 minutes before use.

Assembling the Falooda!

  2. Take a drinking glass and add strawberry essence to the sides of the glass as shown. The essence should start trickling down the glass slowly.

  3. Now add 4 tbsp of basil seeds into the glass. Add 1.5 tbsp of jelly to the glass.

  4. Add 1.5tbsp of Falooda Vermicelli/Sev that we had made and refrigerated to this glass.

  5. Add 3 to 4 tablespoon of Falooda milk that we had made before.

  6. Add 2 tbsp each of all the fruits that we have.

  7. Now add a scoop of the ice-cream to the glass at the top.

  8. You can go ahead and further add any of the above ingredients base on the size of the glass. More the merrier!
  9. Now add strawberry essence again to the top of the glass to add more color and flavor!
