All good comes to those who wait! The same goes with this recipe as well. While this is easy to make, it definitely is a bit time consuming because of the fact that we are making an ice cream without the ice cream maker.

So if you want to eat this ice cream on a Saturday morning, you better start preparing this the Friday evening.

The best thing about this recipe is the fruit flavor itself. This recipe is not done using any fruit or artificial synthetic essence as is the usual case with the ice cream shops. We use the pure fruit itself to make this and it is absolutely awesome and you will be thrilled to see the outcome.

Well, we were thrilled, because the ice cream tasted heavenly and the toppings added the extra pinch that you need. Feel free to experiment here as we did and you will love yourself for trying this dish.

Instructions
  1. The Ingredients are shown for your reference. Very simple and minimal ingredients.

  2. Take a fresh piece of cantaloupe, cut it into half, remove the seeds and take 3 cups of sliced pieces. Move it to a single bowl.

  3. Add Condensed milk and sugar to the bowl. You can buy the condensed milk (also known as sweetened condensed milk) or you can make your own. It is very easy to make condensed milk. Simply boil 1/2 liter high fat milk until the milk gets reduced by more than half and becomes a thick paste. What this does is takes away all and any moisture content and only the fat in a liquid state remains. You can add sugar to this while boiling or not, your choice. Refrigerate this and it can be used many times across all dishes.
  4. Now blend this mixture of cantaloupes, condensed milk and sugar thoroughly to form a base as shown.

  5. Pour the content in a container and cover it with a plastic paper and place it in freezer for 2 hrs. Use plastic over so that the top layer does not crystallize and the ice-cream base forms nicely.

  6. After 2 hours, remove from freezer and transfer it in a blender or mixer, whisk/blend for 1 minute.
  7. Now repeat the two steps two more times, that is:

    • Pour the content in a container and cover it with a plastic paper and place it in freezer for 2 hrs
    • After 2 hours, remove from freezer and transfer it in a blender or mixer, whisk/blend for 1 minute

  8. Once this is done, refrigerate for 6-8 hours. Remove from the freezer and you will notice that the texture is awesome and you can feel the ice-cream when you take a scoop even before you eat! Add toppings like nuts, wafer, honey and chocolate slices and serve the scoop of heaven!
