The King Of Sweets – Kaju Katli Recipe – 30 Minute Challenge

Kaju Katli, is rightly known as the King of Sweets. Not just because of its taste, but also the number of versions of this sweet has spin off and the universal appeal this has cannot be matched. Not many will say “I do not like this”.

The thought that can this Kaju Katli Recipe be done at home has always lingered in the minds of people. Any sweet shop has this by default and is one the most demanded and sold one. So whats so difficult to make this at home? Seldom we see this being done at home while many other sweets are attempted.

So we thought, why don’t we do this and lets see if we can do this under 30 minutes. So we chose the base version of this Katli and wanted to do it as quick as possible.

Was it possible? You Bet it was! The very reason why we did not want to garnish and present it the way it regularly is done in other recipe sites is to showcase how simple it is to make and how this could become a regular recipe at home. You really don’t have to run and get it from a sweet shop. You could make your neighbor come to you for this!

  • 1 cup Cashew Nuts
  • 70 % sugar (70% of cashew cup)
  • 1/4 tbsp Ghee
  • 20 % Milk Powder (20% of cashew cup)
  • 1/4 cup water

The Cashew Base
  1. Take the cashews in a mixer grinder and grind it to a powder. The finer the powder is, the more the sweet melts in the mouth. But many people prefer it to be a bit coarse and that's fine as well.

  2. To this cashew powder, add the milk powder and sugar and mix thoroughly.

The Sugar Base
  1. Place a boiling pan to the stove and in full flame, add water and sugar to it.
    Step 3
  2. Leave it until it boils. Once sugar melts, it starts forming the sugar paste and wait until what we call as the "Single String Consistency"

  3. How to check"Single String Consistency" Very Simple. Just pick some sugar paste from the pan using a spoon, then once it cools down a bit, test it using thumb and fore finger fingers as shown. You will see the single string!

  4. Once this state has been reached, switch off stove, add the cashew mix and mix thoroughly and allow it to cool.

Finishing the Katli
  1. Take a plate and apply/spread the ghee in this plate. Move the cashew mix to this plate and start making a dough when the mix is warm so that its easy.

  2. Make a good dough out of the mix (while warm) and using a chappathi maker, press the dough to a circular shape with decent thickness. This thickness determines the thickness of the sweet, it should not be too thick or too thin.

  3. Now cut this dough to a shape you like and allow it to cool completely.

  4. The standard shape is show below. This is very easy, just do it slowly.
