WHY PEPPY PANEER TIKKA PIZZA

We didn’t want to make another pizza recipe just to be published- be it the regular veggie pizza or the chicken pizza. There are umpteen regular pizza recipes that are available and that are wonderful to try and make at home.

This time we wanted to try out the famous PEPPY PANEER PIZZA – and by making the paneer smoked so that it added that zing to the pizza taste.

Characteristics of this pizza recipe

  • PEPPY– The word peppy means lively and high-spirited! That’s precisely what we want our Pizza to be – lively and kicking all the taste in our mouth 🙂
  • PANEER TIKKA – Another tasty ingredient. Typically the paneer (or the Indian Cotton Cheese) is strewn just by cooking it. But here, we smoke it 50% to get the tikka effect! It is delicious.
  • NO YEAST – This is a No YEAST PIZZA DOUGH. Typically yeast is used in the pizza dough to make the dough rise. But we do not and we have explained everything related to using and not using yeast in a pizza at the bottom of the post.
  • No OVEN – Oh yes. We are making this at home and want to make sure this is possible even without an oven! So yes, this is a No Oven Pizza!

The Peppy Paneer Tikka Pizza is a fusion recipe - combining the Italian Pizza with Indian Paneer Tikka (Smoked Indian Cottage Cheese) and making a wonderful tasting cheesy Paneer Pizza!

Ingredients

  • 100 gm Paneer (Indian Cottage Cheese)
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Garam Masala
  • 1/2 tbsp Ginger Garlic Paste
  • 1 tbsp Red Chilli Powder
  • 1 tbsp Salt
  • 1 tbsp Mustard Oil
  • 1 piece Onion (sliced)
  • 1 piece Tomato (sliced)
  • 1 cup Maida or All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 4 tbsp Yogurt
  • 2 tbsp Oil (to fry)
  • 6 tbsp Pizza Sauce
  • 1 cup Grated Cheese
  • 10 pieces Jalapeno
  • 10 pieces Black Olives

Instructions

Making the Paneer Tikka Ready

  1. Take the paneer in a mixing bowl and add turmeric powder, garam masala, ginger garlic paste, red chilli powder, salt, and mustard oil to it and mix well.

    Once all the paneer is coated with the masala, move it to a separate bowl.

  2. In the same bowl, add onion and capsicum along with the remaining masala and mix well.

  3. Heat a frying pan in high flame, once it is hot - add the paneer to it and cook for 1 to 2 minutes in high flame until the masala gets stuck to the paneer and we get the smoked smell and flavor.

    Note: We don't need to cook the paneer thoroughly, it will get cooked while making the pizza.

  4. In the same pan, add onion and capsicum and cook for 1 to 2 minutes. Again make sure not to overcook.

  5. Now add the chopped tomato pieces to onion and capsicum and mix well.

Making the No Yeast Pizza Dough

  1. Take Maida (all purpose flour) in a mixing bowl and add the baking powder and baking soda to it. Mix thoroughly.

    Now add 3 tbsp of yogurt and mix well again.

    These three ingredients are the substitutes for yeast!

    Note: Yogurt is already fermented and this creates the required flavor for the pizza dough along with baking powder and baking soda.

  2. Add 2tbsp of oil and mix and press well to make a very soft and elastic dough!

    Leave this aside.

MAKING THE PEPPY PANEER TIKKA PIZZA

  1. In a frying pan or tawa, add salt and spread in the bottom and place a perforated stand over it.

    Now close the pan using a lid and heat it in full flame for 5 minutes. This is required for the salt to get heated.

  2. Make round balls of the dough and roll them to a circular shape as shown. Use some dry maida/all purpose flour while rolling so that it doesn't stick to the roller.

  3. This is important - use a fork to make small holes all over the rolled dough. The holes in the dough make sure that the pizza is cooked evenly and rises in all sides. Otherwise, you will not have a consistent pizza, one side may taste good while the other side may taste different.

    Also, this is a no yeast Pizza. Read the difference between using Yeast and not using Yeast in a Pizza dough at the end of the post.

  4. Take 3 tbsp of Homemade Dripping Pizza Sauce and apply all over the pizza dough as shown.

  5. Spread grated cheese over the pizza dough.

  6. Add the capsicum, onion, tomato mix on top of the pizza dough.

  7. Now add our already made paneer tikka cubes over the dough. Remember, they were not fully cooked. This time they will be 🙂

  8. Add the olives and jalapeno over the pizza dough. Then spread some more cheese on this.

  9. Place this pizza dough with the toppings over the stand on the hot pan and close the lid.

    Allow it to cook for 20 to 30 minutes in medium to low flame.

  10. Throw in some chilli flakes as needed and you are all set to serve and eat!

    Once completed, you have the delicious, great tasting homemade Peppy Paneer Tikka Pizza which is made without oven on a pan/tawa and without yeast! Phew 🙂

  • Can you make Pizza Dough Without Yeast?

Yes! And that's precisely what we have done here. If you had followed the recipe, you would have noticed that no yeast was used and we used only baking powder and baking soda.

Yeast is the one ingredient a pizza dough that makes the pizza dough to rise. The best pizza dough recipes produce a dough that rises quickly, making for an airy and bubbly crust. And this rise of bread is primarily because of the yeast and the presence of gluten in it!

Does that mean Pizza need yeast?

No - we achieve the same rising of the bread using baking powder and baking soda along with yogurt! The taste is not the same, but hey, its gluten-free and good tasting!

Making the Paneer Tikka Ready

STEP 1

Making the No Yeast Pizza Dough

Now add 3 tbsp of yogurt and mix well again.

These three ingredients are the substitutes for yeast!

Note: Yogurt is already fermented and this creates the required flavor for the pizza dough along with baking powder and baking soda.

Add 2tbsp of oil and mix and press well to make a very soft and elastic dough!

Leave this aside.

Take 3 tbsp of Homemade Dripping Pizza Sauce and apply all over the pizza dough as shown.

Allow it to cook for 20 to 30 minutes in medium to low flame.
