Ingredients

INGREDIENTS FOR MARINATION

  • 1/2 kg Boneless Chicken (cut and cleaned)
  • 2 tbsp Curd
  • 2 tbsp Chilli Powder
  • 1 tsp Garam Masala
  • 1 tsp Pepper Powder
  • 2 pinch Salt
  • 3/4 tbsp Ginger Garlic Paste
  • 4 tbsp Oil (to fry)
  • 1 tsp Cumin Powder
  • 1/2 tsp Fennel Powder
  • 2 tbsp Lemon Juice

INGREDIENTS FOR CHILLI SAUCE BASE

  • 1 cup Chopped Onion
  • 1 cup Chopped Green Capsicum
  • 1/2 cup Chopped Coriander Leaves
  • 2 tbsp Ghee
  • 3 tbsp Tomato Ketchup
  • 2 tbsp Light Soy Sauce

Instructions

  1. Take the cleaned chicken pieces in a mixing bowl and add all the marinating ingredients listed above.

    Mix thoroughly and allow it to marinate for 15 minutes.

  2. Add 4 tbsp of oil to a pan and start heating.

    Add the marinated chicken to this pan, mix well and start cooking in high flame.

    DO NOT ADD WATER TO THIS. We are trying to fry the chicken.

    It will take 10 to 15 minutes for the chicken to completely fry. Once fried, move the fried chicken pieces to another bowl.

  3. Add ghee to the pan and heat it until the ghee melts completely. Now add chopped onions to the pan and fry until the onion turns light brown and the raw smell goes away completely.

  4. Once the onions are fried, add capsicum and salt to this and mix thoroughly. Mix well and cook in low flame for 5 minutes. This is needed so that the rawness goes away and the taste of capsicum starts getting into the dish.

  5. Now add ketchup and soy sauce to this and mix well.

    Add the fried chicken that we had kept in a separate bowl to this and mix well. Allow this to cook for 2 minutes in the low flame so that the sauce essence gets into the chicken. This gives that exquisite taste to the dish!

  6. Garnish the Chilli chicken with the chopped coriander leaves and serve!

Recipe Notes

  • You can add egg white (2) to marinating ingredients if you need to make the chicken chewy! But you need to deep fry using a lot of oil.
  • This recipe shows the way to fry the chicken with little oil - almost dry heating. But you can as well deep fry using more oil. Either way is fine.
  • Since this has onion added, it is better to eat by that day. No point in refrigerating. The actual taste will not be the same once refrigerated.
  • Make sure to buy fresh ingredients, specifically the chicken.

  • Boneless Chicken – 1/2kg – Cut into pieces and cleaned well.
