The “Famous” word in “Famous Jigarthanda” is not just an adjective anymore. It is the recipe name itself. That’s how much the name synchronizes with this recipe in South Tamilnadu.

History says the recipe was brought down by the Mughals to Madurai where it became a household name. Jigarthanda by itself means “Cool Heart”. The dish is also known by name “Jil Jil Jigarthanda” πŸ™‚

Now the question I had in my mind – is this Famous Jigarthanda an Ice-cream? A Dessert? or a Summer Juice? There is no direct answer to this but I believe the Famous Jigarthanda is very similar to the one and only Falooda (for which we have successfully provided the recipe πŸ™‚ ). That means the dish is a one of its kind but can fall into any of the categories. Its up to the individual!

The Thing about Ingredients

  • The almond resin or badam pisin (however it is called) is a super natural coolant. It is apparently prepared from solidifying gum that you get from the almond tree. When soaked this forms a jelly like crystallized substance which is very good.
  • Nannari syrup adds a lot of taste and is a very key ingredient to this recipe.

 

Points to Note

  • You can buy Nannari syrup in any medical store or ayurvedic shops. Just make sure if it is possible to get the natural extract and not the synthetic one. Usually getting the natural extract is a bit difficult. We will share how to prepare the natural Nannari Syrup at home very soon and update the link here!
  • You can prepare the ice-cream as mentioned in the recipe steps or buy a good vanilla ice-cream from a store as well. Both works.. Depends on your passion to make it yourself :). We will also post our own Vanilla Ice-Cream Recipe very soon.

  • 1/2 litre Full Cream / High Fat Milk
  • 250 gm Fresh Cream
  • 20 tbsp sugar
  • 50 ml Hot Water
  • 1 tbsp corn flour (optional)
  • 2 tbsp water (optional)
  • 5 tbsp Nannari Syurp
Reduced Milk
  • 1 litre Full Cream / High Fat Milk
  • 20 tbsp sugar

Making Reduced Milk
  1. The milk should be a high fat, full cream milk so that it adds a rich and royal flavor to the dessert!
  2. Add the milk to a boiling vessel and boil the milk. Once it starts boiling, stir and reduce the milk to 30% of the original volume and switch off the flame. Now add sugar to this.

  3. Cool down the milk and freeze it for 30 minutes. The milk should have a flowing consistency and not like condensed. Jigarthanda Condensed Milk is ready!
Making Almond Resin / Badam Pisin
  1. Take almond resin and soak in a water for at least 5 hours. Just add the water and place in a refrigerator. It wil get swelled up.

  2. Freeze it for 30 mins and you get a beautiful looking resin.

Making Jigarthanda Ice Cream
  1. This is the real thing. This is where the wonderful stuff starts. Ingredients for your reference again: Full Cream Milk -> 1/2 liter, Fresh Cream -> 250g, Sugar -> 20, tablespoon, hot Water -> 50 ml, optional ingredients - Cornflour -> 1tablespoon, water -> 2 tablespoon
  2. Take the 1/2 liter full cream milk in a boiling vessel and start boiling it. Once it boils, add 16tbsp of sugar, lower the flame and allow it to boil for another 10 minutes.
  3. Add 4 tablespoon of sugar in another pan and start heating with full flame. Once all the sugar is melted, change the flame from high to low and wait for the sugar to turn golden brown. Make sure it does not get burnt.

  4. Once it has turned golden brown add hot water to it and mix well. Now caramelized sugar is ready

  5. Now to making the milk cream which forms the base for the Jil Jil Jigarthanda ice-cream.. Start boiling the 1/2 liter full cream milk.
  6. If the milk is not thick or creamy enough, add some water to 1tbsp corn flour and mix thoroughly without lumps in a small bowl.

  7. Then add this to the boiling milk slowly while stirring. Wait for 2 minutes so the mix gets set. Now add the caramelized sugar to this mix and stir well. Switch off the flame and wait for the milk mix to cool down to room temperature.
  8. This is how it will look once done.
  9. Once this is cooled , take the fresh cream in bowl , mix well for 2 mins without adding any water and add this to milk cream and mix thoroughly.

  10. Add this to mixer grinder and grind this for 2 to 3 mins. (add small quantity at a time while grinding)

  11. Move this ice-cream mix to a tight container and place it in freezer for 2 hours . After 2 hours take the ice cream and move to mixer grinder and grind for 2 to 3 mins and freeze it again. Follow the same procedure for 2 more times so that the ice-cream gets well thickened and set.
  12. Finally freeze the ice cream for 8 hours . The Jigarthanda ice cream is ready.

Assembling the Final Jigarthanda
  1. Ingredients for your reference - Jigarthanda ice cream - 2 scoops, Reduced Milk -> 150 ml, Almond Resin -> 4 to 5 tablespoon, Nannari syrup - 6 tablespoon.

  2. Take a glass and add the Nannari Syrup (3tbsp) to the sides of the glass. Let it slowly drip to the bottom.

  3. Add Almond Resin that was refrigerated to this glass. After this add 2 more tbsp of nannari syrup.
  4. Now add the reduced milk to this.

  5. Add 2 scoops of Jigarthanda Ice-cream and remaining nannari syrup to this.

Recipe Notes
  • Prepare the Jigarthanda Recipe the previous day since you need 8 hours of refrigeration.
  • Prepare Almond Resin also the previous day again as you need to soak it for 8 hours.
  • You can also add some Sabja seeds if you need, but the Almond Resin is a natural coolant by itself!
  • You can prepare the ice-cream as mentioned in the recipe steps or buy a good Jigarthanda ice-cream or vanilla ice-cream from a store as well. Both works.. Depends on your passion to make it yourself :). We will also post our own Vanilla Ice-Cream Recipe very soon.
