HOW TO MAKE CHOCOLATE TRUFFLE CAKE STEP BY STEP WITH IMAGES

 

INGREDIENTS – 1 Cup = 100 gm

  • 150 gm of All Purpose Flour
  • 25 gm of Cocoa Powder
  • 80 gm Butter
  • 60 gm Sugar
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 5 tbsp Condensed Milk
  • 125 ml Milk
  • 1 tsp Vanilla Extract
  • 1 tsp of Instant Coffee Powder
  • Sugar Syrup
    • 1/2 cup Water + 7 Tbsp sugar
  • Chocolate Truffle Icing
    • 250 ml Fresh Cream
    • 350 gm Dark Compound Chocolate
    • 2 tbsp Butter

INSTRUCTIONS

 

STEP 1 – MAKING THE CAKE

Add the All purpose flour, cocoa powder, baking powder and baking soda together in a bowl by sieving them separately. Do not add them together initially and sieve, this is to make sure we only get the fine powders so that the cake comes out soft and fluffy.

Sieve twice – the second time will be together.

Take a bowl, add butter and sugar together. Mix them using a hand mixer thoroughly. Now add condensed milk to this and beat again till it is completely mixed.

STEP 3

Now add 1 tsp of vanilla extract, 1 tsp of instance coffee powder to the milk and mix well. Coffee powder is used to enhance the taste of chocolate.

Before moving to next step, lets get our homemade oven ready 🙂

Our standard way – Spread some rock salt at the bottom of a pressure cooker, place a wired steel rack to mount the cake tin and close the cooker. You do not need to place the regulator weight. Heat the cooker in medium flame for about 10 mins and leave it on!

Your pre-heated homemade oven is ready 🙂

STEP 5

Now into the butter mixture that we did in step 2, add the powdered mixture and mix well. Once mixed well, add the coffee mix and mix thoroughly to form the cake batter.

Now spread butter in the insides of the cake tin and place a parchment paper at the bottom of the tin. This is to make sure the cake does not stick to the tin.

Pour the cake batter into the tin and spread evenly.

Place the cake tin inside the pressure cooker, close the cooker (do not use regulator) and heat for 45 minutes in low flame.

How do you know the cake is done? Prick the cake using a tooth pick and see if any cake batter sticks to it. Usually after 40 minutes, you will see no batter sticks to the tooth pick! Once the cake is done, switch off the stove!

STEP 8 – Making the Sugar Syrup

For the cake to be soft, moist and a bit sweet, we need the sugar syrup. It is very simple to make.

Heat the sugar in a bowl of water until it dissolves (keep stirring) and allow it to completely cool.

STEP 9 – Making the Chocolate Truffle Icing

Heat the fresh cream in a boiling pan and switch off the gas before it starts boiling. Take the dark compound chocolates in a mixing bowl and pour the heated cream into the dark chocolate. Add butter to get the shiny finish, mix thoroughly so that no lumps are formed. Allow it to rest for 1 hour so that it gets set.

STEP 10

Now remove the cake from the tin and place it on a flat plate. Using a knife (perforated preferably), cut the cake at the center into two halves as shown. Do this slowly, and it is okay if the cake gets cut unevenly. We will be able to make it up at the end. So do not worry.

STEP 11- ICING THE CAKE

Now take one half, and coat sugar syrup across the surface of the cake (the inside half of the cake) using a small brush as shown. This is to make the cake moist and sweet.

Once this is done, apply the chocolate truffle icing generously on the sugar coated surface of the cake.

Cover the cake with the first half and on top of the cake now, repeat the process – apply sugar coating and the truffle icing.

Refrigerate for 10 minutes to set the cake!

STEP 12

Heat the remaining truffle icing lightly so that it gets liquid consistency and the shine back. Using this, apply all over the cake using a spatula/knife and cover it evenly. As we had said before, any unevenness in the cake will be covered by this truffle icing and the cake will start having a great shiny look now 🙂
